  • 3 zucchinis, sliced
  • 3/4 cup cashews
  • 1 cup almond milk
  • 28 oz jar tomato sauce
  • 2 cups bread crumbs
  • 5 oz vegan mozzarella shreds
  • 3 cloves garlic, pressed
  • olive oil

Instructions

  1. Preheat your oven to 410°F and prepare an 8×11 inch casserole dish.
  2. Spread zucchini slices on a baking sheet, season with salt, and let them rest between paper towels for about 30 minutes to draw out moisture.
  3. In a blender, combine cashews and almond milk; season with salt and pepper until smooth.
  4. Heat olive oil in a frying pan over medium heat. Dip each zucchini slice in the cashew mixture then coat with bread crumbs before frying until golden brown on both sides.
  5. In a bowl, mix garlic with Italian herbs into the tomato sauce.
  6. Layer fried zucchini slices with sauce and vegan cheeses in the casserole dish until all ingredients are used, finishing with sauce and cheese on top.
  7. Bake for around 20 minutes until golden brown.
