  • 1 large white onion
  • 2 cloves garlic
  • 1 jalapeño
  • 2 cans fire-roasted tomatoes with green chilies
  • 4 cups organic vegetable broth
  • Corn or flour tortillas

Instructions

  1. In a mixing bowl, combine rinsed lentils, diced onion, minced garlic, diced jalapeño, fire-roasted tomatoes, and vegetable broth. Stir in taco seasoning and simmer until lentils are tender.
  2. Preheat your air fryer or oven while the filling cools slightly. Roll spoonfuls of filling in tortillas and place seam-side down on a baking tray.
  3. Air fry at 375°F (190°C) for about 10 minutes until golden brown or bake at 400°F (200°C) for approximately 15 minutes.
