  • 1 1/2 cups brown lentils
  • 1 large white onion
  • 2 cloves garlic
  • 1 jalapeño
  • 2 cans Rotel fire-roasted tomatoes
  • 4 cups organic vegetable broth
  • Corn or flour tortillas (12)
  • Lime juice

Instructions

  1. Prepare the filling by cooking lentils in vegetable broth until tender. Sauté onions, garlic, and jalapeño until soft. Combine with lentils and Rotel tomatoes; add taco seasoning and mix well.
  2. Assemble taquitos by placing a generous amount of filling in each tortilla, rolling tightly while tucking the ends.
  3. Cook in an air fryer at 375°F for about 10 minutes or bake in an oven at 400°F for 15-20 minutes until crispy.
  4. Serve warm with salsa, hot sauce, or vegan sour cream.
