  • 1 1/3 cup soaked cashews
  • 2/3 cup unsweetened dairy-free yogurt
  • 1/4 to 1/2 cup water
  • 2 tablespoons white vinegar
  • 2 tablespoons lemon juice
  • 1/2 to 2/3 teaspoon sea salt

Instructions

  1. Soak cashews in cold water for at least 3 hours or boil for 10-15 minutes until softened. Drain and rinse.
  2. In a high-speed blender, combine soaked cashews, dairy-free yogurt, water (start with less), white vinegar, lemon juice, and sea salt.
  3. Blend until smooth and creamy, scraping down the sides as necessary.
  4. Taste and adjust acidity if desired by adding more lemon juice or vinegar.
  5. Serve immediately or chill in the fridge in an airtight container for up to 6 days.
