  • 4 onions
  • 3 cloves garlic
  • 2 leeks
  • 2 carrots
  • 3 slices celery root (celeriac)
  • 2 cans white beans
  • 2 cans diced tomatoes
  • 8 cups vegetable stock
  • 200 g freekeh
  • 2 Tbsp tomato paste
  • 2 tsp marjoram
  • 2 tsp oregano
  • 2 bunch parsley, chopped
  • 1 tsp celery salt
  • 2 tsp onion powder
  • 4 tsp paprika powder, sweet
  • 1 tsp smoked salt (optional)

Instructions

  1. Soak cracked freekeh in vegetable broth overnight.
  2. Sauté onions and garlic in a large pot until softened. Add chopped leeks, carrots, and celery root; cook briefly.
  3. Incorporate soaked freekeh (or TVP), white beans, diced tomatoes, vegetable stock, and spices into the pot.
  4. Stir well and let simmer for about 20 minutes until flavors meld together.
