  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks (or frozen, thawed)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons cornstarch (for coating the tofu)
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • 2 tablespoons neutral oil for cooking

Instructions

  1. Press the tofu between kitchen towels for 15 minutes to remove excess moisture.
  2. Cut tofu into cubes and coat with cornstarch until evenly covered.
  3. In a skillet over medium-high heat, heat oil and fry tofu in a single layer for about 7 minutes until golden brown; set aside.
  4. Sauté bell peppers and onions in the same pan for about 5 minutes until caramelized.
  5. Add garlic and ginger; cook for an additional 30 seconds.
  6. Stir in pineapple chunks and caramelize for another 2–3 minutes.
  7. Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over vegetables and return tofu to the skillet. Stir gently for about 2 minutes.
