  • 500 g white bread flour
  • 10 g fast action yeast
  • 1 teaspoon salt
  • 3 tablespoons olive oil
  • 160 ml unsweetened non-dairy milk
  • 160 ml water
  • 75 g raw cashews
  • 85 g vegan butter

Instructions

  1. In a large bowl, combine bread flour, yeast (on one side), salt, and sugar (on the other). Add olive oil, lukewarm non-dairy milk, and water. Mix until a rough dough forms.
  2. Knead by hand or with a stand mixer for 5–10 minutes until smooth and elastic.
  3. Let the dough rise in a lightly oiled bowl for 1–2 hours until doubled in size.
  4. Soak raw cashews in boiling water to soften while the dough rises.
  5. Punch down the risen dough, divide into approximately thirty pieces, and roll each into a ball.
  6. Arrange dough balls around a greased ramekin on a baking sheet; let rise again for about 30–40 minutes.
  7. Preheat oven to 210°C (425°F) while making garlic butter by melting vegan butter with crushed garlic and herbs.
  8. Blend soaked cashews with garlic and seasonings until smooth; heat until thickened.
  9. Brush dough balls with garlic butter and bake for about 20 minutes until golden brown.
