  • 10 tablespoons vegan butter
  • 1 1/2 cups all-purpose flour
  • Scant 2/3 cup old-fashioned rolled oats
  • 1 cup organic cane sugar
  • Scant 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1 1/4 cups full-fat oat milk
  • 1 1/2 teaspoons pure vanilla extract
  • 1/4 teaspoon pure almond extract (optional)
  • vegan vanilla ice cream (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the fruit by slicing peaches and tossing them with blueberries, brown sugar, and spices. Let sit for 30 minutes.
  3. Toast the vegan butter in a cast iron skillet until nutty and fragrant.
  4. In a bowl, mix flour, oats, sugar, salt, and baking powder. Combine with oat milk and vanilla until just mixed.
  5. Pour batter over melted butter in the skillet, top with fruit mixture.
