  • 2 tsp. olive oil
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Italian Blend cheese
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 tsp. garlic powder
  • 2 oz. sliced turkey turkey pepperoni
  • Optional: 1 can sliced black olives

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a glass pie dish with non-stick spray.
  2. In a non-stick frying pan, heat olive oil over medium-high heat and brown the mushrooms until lightly golden.
  3. In a mixing bowl, combine Mozzarella and Italian Blend cheese with Italian herb seasoning.
  4. In another bowl, beat eggs, then mix in heavy cream and garlic powder.
  5. Layer the mixed cheeses in the prepared dish, followed by the egg mixture, browned mushrooms, and turkey pepperoni (and olives if using).
  6. Bake for 30-35 minutes until set and golden on top.
