  • 1/4 cup low-sodium soy sauce
  • 1/4 cup water
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 2 tsp fresh ginger (grated)
  • 2 cloves of garlic (minced)
  • Sweet gem lettuce leaves
  • Sesame seeds (for garnish)
  • Green onions (sliced)

Instructions

  1. In a mixing bowl, combine soy sauce, water, honey, rice vinegar, sesame oil, cornstarch, ginger, and garlic until well mixed.
  2. Heat olive oil in a skillet over medium-high heat. Add diced chicken and cook for about 5 minutes until slightly browned. Flip the chicken and cook for an additional 3 minutes.
  3. Pour the prepared sauce over the chicken in the skillet and ensure all pieces are coated. Lower the heat and simmer for an additional 3–5 minutes until the sauce thickens.
  4. Lay out sweet gem lettuce leaves on a platter and fill each leaf with the teriyaki chicken mixture. Garnish with sesame seeds and sliced green onions.
