  • 1 cup steamed and mashed sweet potato
  • 1/3 cup cocoa powder
  • 1/4 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/3 to 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Steam the sweet potato until soft, then mash it.
  3. In a food processor, blend the mashed sweet potato with cocoa powder, oat flour, baking soda, salt, nut butter, maple syrup, melted coconut oil, and vanilla extract until smooth.
  4. Stir in chocolate chips and pour the batter into the prepared pan. Top with extra chocolate chips if desired.
  5. Bake for about 25 minutes or until a toothpick comes out clean. Allow cooling before slicing.
