  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup dried cranberries or raisins, optional
  • 1/4 cup chopped walnuts or pecans, optional
  • Fresh parsley, chopped
  • Drizzle of honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Halve the butternut squash, remove seeds, and brush cut sides with olive oil. Drizzle with honey and sprinkle cinnamon, salt, and pepper. Roast cut side down on a baking sheet for 30–40 minutes until tender.
  3. In a skillet over medium heat, sauté diced onion and minced garlic in olive oil until softened. Mix in the shredded chicken and chicken broth; cook until heated through.
  4. Stir in Parmesan cheese and any optional ingredients like cranberries or nuts; season to taste.
  5. Scoop out some flesh from roasted squash halves and mix into the filling.
  6. Fill each squash half with the chicken mixture and return to the oven for an additional 15 minutes until golden brown.
