  • 2 cups fresh spinach, sautéed and chopped
  • 8 oz low-moisture mozzarella cheese, cut into cubes
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley
  • Salt
  • Black pepper
  • Olive oil for cooking

Instructions

  1. Sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted. Cool slightly, then squeeze out moisture and chop.
  2. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and chopped spinach. Mix gently until just combined.
  3. Form meatballs by flattening a portion of the mixture in your palm, placing a cube of mozzarella in the center, and sealing it around the cheese.
  4. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides.
  5. Finish cooking by covering the skillet on low heat for 5–7 minutes or transferring to an oven preheated to 375°F (190°C) for 10–12 minutes.
