  • 1 large salmon fillet (about lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix chopped spinach, feta cheese, minced garlic, olive oil, cream cheese, lemon zest, lemon juice, salt, and pepper until well combined.
  3. Place the salmon fillet on a cutting board with the skin side down and slice it in half lengthwise.
  4. Spread half of the filling evenly over one side of each salmon fillet.
  5. Roll each fillet tightly around the filling and secure with toothpicks or kitchen twine.
  6. Place the pinwheels in a baking dish and bake for about 18 minutes or until cooked through.
