  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Smash the cucumbers by cutting them in half and applying pressure with a knife until slightly crushed. Chop into 1-inch pieces.
  2. In a medium bowl, combine smashed cucumbers with diced avocado, feta cheese, pistachios, dill, and chives.
  3. In a separate bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss gently until well combined.
