  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable or canola oil
  • Juice of 1 lime
  • Fresh cilantro
  • Small flour tortillas
  • Spice mix: chili powder, paprika, cumin, onion powder, garlic powder, oregano, cayenne pepper

Instructions

  1. Preheat your oven to 425°F. Lightly grease a large sheet pan.
  2. Cut the chicken into strips and slice the bell peppers and onion.
  3. Arrange the vegetables on the pan, then place the chicken on top.
  4. In a mixing bowl, combine minced garlic, oil, lime juice, and spices. Coat the chicken and veggies evenly with this mixture.
  5. Roast in the oven for 15-20 minutes until cooked through (chicken reaches 165°F).
