  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable oil
  • Juice of 1 lime
  • Fresh cilantro, chopped
  • Flour tortillas
  • Spices: chili powder, paprika, cumin, onion powder, garlic powder, oregano, cayenne pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Lightly grease a large sheet pan. Cut the chicken and vegetables into strips and arrange them on the pan.
  3. In a small bowl, mix together spices. Sprinkle over chicken and vegetables along with minced garlic. Drizzle with oil and toss to coat evenly.
  4. Roast in the oven for 15–20 minutes until the chicken reaches an internal temperature of 165°F (74°C). Warm tortillas in foil during the last 5 minutes.
  5. Remove from oven; squeeze fresh lime juice over everything and sprinkle with cilantro before serving in warm tortillas.
