  • 4 ounces cream cheese
  • 1¾ cup almond flour
  • ¼ cup coconut flour
  • ⅓ cup sugar substitute
  • ½ cup raspberry preserves (sugar-free)
  • 2 eggs
  • ½ teaspoon almond extract
  • 2½ cups unsweetened flaked coconut

Instructions

  1. Preheat your oven to 375°F. Line an 8 x 8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, butter, and cream cheese until crumbly. Add the egg and mix until fully incorporated. Press into the prepared pan and bake for 15-20 minutes until golden brown.
  3. While the crust bakes, beat together eggs in another bowl. Stir in the sugar substitute, almond extract, and flaked coconut until well mixed.
  4. Once the crust is baked, spread raspberry preserves over it evenly. Top with the egg-coconut mixture and return to the oven for an additional 20-25 minutes or until golden on top.
