  • 1 batch Spanish Quinoa
  • 1 1/2 cups cooked lentils (brown, green, or black)
  • 1/3 cup nutritional yeast
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400ºF. If desired, line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cooked lentils, Spanish quinoa, nutritional yeast, chili powder, cumin, coriander, smoked paprika, salt, and pepper.
  3. Spread the mixture evenly on the prepared baking sheet.
  4. Bake for 35-40 minutes, stirring every 15 minutes for even cooking.
  5. Serve warm in tacos or store in an airtight container for later use.
