  • 1 1/2 lb chicken breast
  • 34 tbsp oil (for stir-frying)
  • 1 cup cubed fresh pineapple
  • 1/2 head of broccoli (~1 cup)
  • 1/2 cup red bell pepper
  • 2 stalks of green onion
  • 2 small cloves of garlic
  • 1 inch fresh ginger
  • 23 tbsp coconut aminos
  • 2 tbsp arrowroot flour
  • 1/3 cup coconut aminos
  • 2 tbsp rice vinegar
  • 1 tbsp arrowroot flour
  • 1 tbsp sesame oil
  • ~ 3 tbsp pineapple juice

Instructions

  1. Cut chicken into small pieces and marinate in coconut aminos and arrowroot flour.
  2. Chop vegetables: broccoli, red bell pepper, garlic, ginger, and green onions.
  3. Prepare pineapple by cubing it into inch-sized pieces.
  4. Mix teriyaki sauce ingredients in a bowl: coconut aminos, rice vinegar, arrowroot flour, sesame oil, and pineapple juice.
  5. Sauté bell peppers and broccoli in a large skillet with oil for 2-3 minutes; remove from heat.
  6. Cook marinated chicken along with garlic and white part of scallions until browned.
  7. Add sautéed veggies and pineapple to the skillet; combine well.
  8. Pour in teriyaki sauce; stir until sticky and well-coated.
  9. Garnish with green onion tops before serving.
