  • 1 1/2 lb chicken breast
  • 1 cup cubed fresh pineapple
  • 1/2 head of broccoli (~ 1 cup)
  • 1/2 cup red bell pepper
  • 2 stalks green onion
  • 2 small cloves of garlic
  • 1 inch fresh ginger
  • 34 tbsp oil (for stir-frying)
  • Salt to taste
  • 23 tbsp coconut aminos
  • 2 tbsp arrowroot flour
  • 1/3 cup coconut aminos
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • ~ 3 tbsp pineapple juice

Instructions

  1. Cut the chicken into small pieces and marinate with coconut aminos and arrowroot flour for at least 15 minutes.
  2. Chop broccoli, red bell pepper, garlic, ginger, and scallions separately.
  3. Prepare fresh pineapple by cutting it into cubes.
  4. In a bowl, mix ingredients for the teriyaki sauce: coconut aminos, rice vinegar, arrowroot flour, sesame oil, and pineapple juice.
  5. Sauté bell peppers and broccoli in a large skillet until slightly tender; set aside.
  6. Cook marinated chicken with garlic and white part of scallion until browned.
  7. Add sautéed veggies, ginger, pineapple, and teriyaki sauce; stir until sticky and well-coated.
  8. Garnish with green part of scallion before serving.
