  • 1/4 cup pumpkin puree
  • 1/4 medium carrots (grated)
  • 1/4 cup maple syrup
  • 1/2 cup almond butter (can sub for any nut or seed butter)
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 8 ounces cream cheese (softened)
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar

Instructions

  1. Line an 8 x 8 baking dish with parchment paper.
  2. In a mixing bowl, combine coconut flour, cinnamon, sea salt, and sugar. Stir in pumpkin puree and grated carrots.
  3. Melt almond butter with maple syrup in a microwave-safe bowl or stovetop pot; whisk in vanilla until smooth.
  4. Pour the melted mix into the dry ingredients and stir until fully combined. Adjust consistency with milk if needed.
  5. Press the mixture into the prepared baking tray firmly and refrigerate for at least 10 minutes.
  6. For frosting, mix cream cheese, milk, cinnamon, and sugar in a bowl until thick.
  7. Spread the frosting over chilled bars and return to the fridge for another 30 minutes before slicing.
