- 1/4 cup sugar (or sugar substitute)
- 1/4 cup pumpkin puree
- 1/4 medium carrots (grated)
- 1/4 cup maple syrup
- 1/2 cup almond butter (can sub for any nut or seed butter)
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 8 ounces cream cheese (softened)
- 1 teaspoon cinnamon
- 2 tablespoons sugar
- Line an 8 x 8 baking dish with parchment paper.
- In a mixing bowl, combine coconut flour, cinnamon, sea salt, and sugar. Stir in pumpkin puree and grated carrots.
- Melt almond butter with maple syrup in a microwave-safe bowl or stovetop pot; whisk in vanilla until smooth.
- Pour the melted mix into the dry ingredients and stir until fully combined. Adjust consistency with milk if needed.
- Press the mixture into the prepared baking tray firmly and refrigerate for at least 10 minutes.
- For frosting, mix cream cheese, milk, cinnamon, and sugar in a bowl until thick.
- Spread the frosting over chilled bars and return to the fridge for another 30 minutes before slicing.
