  • 1 cup shredded coconut
  • 5 dates
  • pinch sea salt
  • 1 Tbsp coconut oil (only if needed)
  • 1.5 cups full fat coconut cream
  • 1 cup blueberries
  • 1/4 cup maple syrup
  • 1 Tbsp Earl Grey tea
  • 1 Tbsp corn starch
  • 2 tsp agar-agar
  • 1/3 cup blueberries (for topping)
  • 1/3 cup dragon fruit balls (for topping)
  • 1 Tbsp shredded coconut (for topping)
  • edible flowers (optional)
  • any favorite fruit or toppings

Instructions

  1. 1. For the crust, blend almonds in a food processor until crumbly. Add shredded coconut, dates, sea salt, and optional coconut oil. Pulse until sticky. Press into a tart tin and chill.
  2. 2. Heat coconut cream in a saucepan over medium heat until smooth. Stir in blueberries, maple syrup, Earl Grey tea, corn starch, and agar-agar. Mash blueberries slightly and cook until thickened.
  3. 3. Strain the filling to remove fruit bits and pour into the chilled crust. Let cool at room temperature before refrigerating overnight to set.
  4. 4. Before serving, top with extra blueberries, dragon fruit balls, shredded coconut, or edible flowers as desired.
