  • 16 ounces cremini mushrooms
  • 3 cloves garlic
  • ½ cup raw walnuts
  • 1 ¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans
  • 2 tablespoons vegan Worcestershire sauce
  • ½ cup panko breadcrumbs

Instructions

  1. Sauté onion and mushrooms in a large pan over medium-low heat until liquid evaporates.
  2. Add garlic, thyme, and smoked paprika; cook for another 3 minutes.
  3. In a food processor, pulse walnuts finely, then mix in the sautéed veggies, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper until combined.
  4. Form patties using about ½ cup of mixture each.
  5. Bake at 400°F for 30–35 minutes or pan-sear until charred.
