  • ¼ cup + 1 tablespoon unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 ½ cups gluten-free flour blend

  • ⅛ teaspoon salt
  • ¼ cup + 1 tablespoon organic cane sugar
  • Spices: cinnamon, nutmeg, ginger, cardamom
  • ¾ cup diced apples

Instructions

  1. Preheat oven to 350°F (177°C) and grease a mini muffin pan.
  2. In a small bowl, mix melted coconut oil, dairy-free milk, applesauce, and vanilla extract. Set aside.
  3. In a large bowl, whisk gluten-free flour, baking powder, salt, sugar, and spices together.
  4. Combine wet and dry ingredients until just mixed; fold in the diced apples gently.
  5. Fill muffin cups evenly with batter and bake for 9–11 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a cooling rack.
