  • 1/2 large jalapeño (diced)
  • 1 small onion (finely diced)
  • 1 tsp olive oil
  • 1 can fire-roasted diced tomatoes (14.5 oz)
  • 1 can black beans (15 oz)
  • 6 large eggs
  • 2 oz colby jack cheese (shredded)

Instructions

  1. Preheat your oven to 450°F.
  2. Heat olive oil in a cast iron skillet over medium heat. Sauté diced onions and jalapeños for about 2 minutes.
  3. Add ground cumin and cayenne pepper; cook for another 2–3 minutes.
  4. Stir in fire-roasted tomatoes and black beans; let simmer for about 15–20 minutes until slightly thickened.
  5. Create small indentations in the mixture and crack an egg into each one. Spoon some vegetable mixture around the eggs.
  6. Bake in the preheated oven for about 5 minutes until the eggs start to set.
  7. Switch to broil, sprinkle cheese on top, and broil for an additional 1-3 minutes until melted.
  8. Serve hot with whole wheat or corn tortillas.
