  • 2 cups cooked and diced chicken breast
  • 8 ounces penne or rotini pasta
  • 1 cup halved cherry tomatoes
  • 1 medium cucumber, diced
  • 1/4 cup finely chopped red onion
  • 1 cup feta cheese crumbles
  • 1/2 cup pitted kalamata olives
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add seasoned chicken breast and cook until golden brown and fully cooked. Remove from heat and let rest before dicing.
  2. In a large pot of salted boiling water, cook the pasta according to package instructions. Drain without rinsing.
  3. While the pasta cooks, wash and chop the vegetables: halve the cherry tomatoes, dice the cucumber, and finely chop the red onion.
  4. In a large mixing bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives. Toss gently to mix evenly.
  5. Drizzle olive oil over the salad mixture and toss again to coat all ingredients evenly. Taste and adjust seasoning if necessary before serving chilled.
