  • 1/4 cup Lemon Juice
  • 3 cloves Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Oregano
  • 1 Tbsp. Red apple vinegar
  • 1 cup Nonfat Plain Greek Yogurt
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Dill
  • 1/4 cup Olive Oil
  • 1 Cucumber, sliced
  • 1 pint Cherry Tomatoes (or sliced tomatoes of your choice)
  • 1/2 cup Red Onion, thinly sliced
  • 1 Tbsp. Lemon Juice
  • 1/4 cup Olive Oil
  • 1 Tbsp. Red apple vinegar
  • 1 Tbsp. Garlic
  • 1 Tbsp. Oregano
  • Feta Cheese

Instructions

  1. Marinate the chicken by combining Greek yogurt, lemon juice, garlic, salt, pepper, oregano, and red apple vinegar in a gallon Ziploc bag. Add cubed chicken breasts and shake to coat evenly. Marinate for at least 20 minutes or overnight.
  2. Heat olive oil in a large skillet over medium-high heat. Remove chicken from marinade and cook for 3-4 minutes on each side until golden brown and cooked through.
  3. Let the chicken rest for a few minutes before slicing.
  4. Prepare the cucumber tomato salad by mixing sliced cucumber, cherry tomatoes, red onion, lemon juice, olive oil, red apple vinegar, garlic, and oregano in a bowl.
  5. Make the tzatziki sauce by whisking together Greek yogurt, lemon juice, garlic, salt, pepper, dill, and olive oil until smooth.
  6. Assemble your bowls by placing cooked chicken alongside the salad and drizzling with tzatziki sauce. Top with crumbled feta cheese.
