  • 1 cup Nonfat Plain Greek Yogurt
  • 1 Tbsp. Lemon Juice
  • 1 Tbsp. Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Dill
  • 1/4 cup Olive Oil
  • 1 Cucumber, sliced
  • 1 pint Cherry Tomatoes
  • 1/2 cup Red Onion, thinly sliced
  • 1 Tbsp. Lemon Juice
  • 1/4 cup Olive Oil
  • 1 Tbsp. Red apple vinegar
  • 1 Tbsp. Garlic
  • 1 Tbsp. Oregano
  • Feta Cheese (optional)

Instructions

  1. Marinate chicken: Combine marinade ingredients in a gallon Ziploc bag, add cubed chicken, seal, and refrigerate for at least 20 minutes.
  2. Cook chicken: Remove from marinade and cook in a skillet with olive oil over medium-high heat for 3-4 minutes per side or air fry at 425°F for about 11 minutes.
  3. Prepare salad: In a bowl, mix sliced cucumber, cherry tomatoes, and red onion.
  4. Make tzatziki: Whisk together tzatziki ingredients until smooth.
  5. Assemble bowls: Layer warm chicken over the cucumber salad, drizzle with tzatziki, and sprinkle feta cheese if desired.
