  • 1/4 cup Lemon Juice
  • 3 cloves Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Oregano
  • 1 Tbsp. Red apple vinegar
  • 1 cup Nonfat Plain Greek Yogurt
  • 1 Tbsp. Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Dill
  • 1/4 cup Olive Oil
  • 1 Cucumber, sliced
  • 1 pint Cherry Tomatoes (or sliced tomatoes of your choice)
  • 1/2 cup Red Onion, thinly sliced
  • 1 Tbsp. Lemon Juice
  • 1/4 cup Olive Oil
  • 1 Tbsp. Red apple vinegar
  • 1 Tbsp. Garlic
  • 1 Tbsp. Oregano
  • Feta Cheese

Instructions

  1. Marinate the chicken by combining yogurt, lemon juice, garlic, salt, pepper, oregano, and apple vinegar in a Ziploc bag. Add cubed chicken and marinate for at least 20 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook marinated chicken for 3–4 minutes on each side until golden brown.
  3. In a bowl, combine sliced cucumber, cherry tomatoes, red onion, lemon juice, olive oil, apple vinegar, garlic, and oregano; toss gently.
  4. Whisk together tzatziki ingredients: yogurt, lemon juice, garlic, salt, pepper, dill, and olive oil until smooth.
  5. Assemble bowls with cooked chicken on top of cucumber salad and drizzle with tzatziki.
