  • 1.5 lbs chicken tenders or breast (cooked, chopped/shredded)
  • 3 cups frozen cauliflower rice
  • 1 (10oz) can Rotel diced tomatoes
  • 1oz packet taco seasoning
  • 8 ounces shredded Mexican cheese blend
  • Grape tomatoes
  • Black olives
  • Avocado
  • Lettuce
  • Sour cream
  • Cilantro
  • Hot sauce

Instructions

  1. 1. Cook chicken by poaching in gently boiling water for 15-20 minutes until tender. Chop or shred once cooked.
  2. 2. Preheat oven to 350ºF.
  3. 3. In a non-stick skillet, heat oil over medium-high heat and fry frozen cauliflower rice until browned.
  4. 4. In a large mixing bowl, combine cooked chicken, browned cauliflower rice, diced tomatoes, and taco seasoning. Mix well.
  5. 5. Transfer mixture to a greased oven-safe dish and top with shredded cheese.
  6. 6. Bake for about 15 minutes until cheese is melted and bubbly.
