  • 8 tbsp unsalted butter, cubed (divided)
  • 1 cup granulated sugar
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans

  3. Insert a candy thermometer and cook the mixture while stirring until it reaches 240°F.
  4. Remove from heat and add cubed butter; let sit for one minute before incorporating vanilla extract (if desired) and pecans.
  5. Stir until smooth; drop spoonfuls onto the prepared sheet quickly as the mixture thickens.
  6. Allow pralines to set at room temperature for about 30 minutes.
