  • 3/4 cup unsweetened cocoa powder
  • 1/8 teaspoon kosher salt
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 8 tablespoons unsalted butter (at room temperature)
  • 2 tablespoons neutral oil (like vegetable, canola or peanut oil)
  • 2 teaspoons pure vanilla extract
  • 2 tablespoons light corn syrup
  • 2 eggs (at room temperature, beaten)
  • 8 ounces semi-sweet chocolate (chopped)
  • 2/3 cup heavy whipping cream
  • 3 ounces miniature M&Ms candies or multicolored Sixlets (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. In a mixing bowl, whisk together gluten-free flour, xanthan gum (if needed), cocoa powder, and salt.
  3. In another bowl, beat together unsalted butter, granulated sugar, and light brown sugar until fluffy.
  4. Mix in neutral oil, vanilla extract, light corn syrup, and beaten eggs until well combined.
  5. Gradually fold dry ingredients into the wet mixture with a rubber spatula until just combined.
  6. Pour batter into the prepared baking pan and spread evenly. Bake for about 28 minutes or until moist crumbs cling to a toothpick inserted in the center.
  7. For the topping: Heat heavy whipping cream until simmering; pour over chopped chocolate and stir until smooth.
  8. Once brownies are cool, pour the chocolate topping over the brownies and let set before slicing.
