  • 1 lb asparagus
  • 1 (450g) block super firm tofu
  • Juice and zest of 1 lemon
  • 2 tbsp cornstarch
  • 2 tbsp nutritional yeast
  • 2 cloves garlic
  • Avocado oil
  • Freshly cracked black pepper and salt

Instructions

  1. Preheat your oven to 425°F. Line a baking sheet.
  2. Toss trimmed asparagus on the sheet with a splash of avocado oil, nutritional yeast, salt, pepper, and lemon juice. Roast for 10-12 minutes until tender.
  3. Coat cubed tofu in cornstarch, nutritional yeast, thyme, salt, and pepper.
  4. Heat avocado oil in a skillet over medium heat. Sear tofu for about 3-5 minutes per side until golden brown.
  5. In a bowl, mix lemon juice, zest, maple syrup, black pepper, vegetable broth, and cornstarch for the sauce.
  6. Remove tofu from the skillet; sauté garlic until fragrant. Pour in the sauce mixture and cook until thickened. Return tofu to coat in sauce.
  7. Serve with roasted asparagus.
