Lemon Parmesan Spinach Chicken is a delightful and easy-to-make dish that combines tender chicken with a creamy, zesty sauce. Fresh spinach adds a vibrant touch, while the lemon and parmesan create a perfect balance of flavors that will impress at any dinner table.

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness; season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook the chicken for 3-4 minutes per side until golden brown and fully cooked. Remove from the pan.
  3. In the same pan, sauté minced garlic for about 1 minute. Add chicken broth, lemon juice, and zest; bring to a boil. Reduce heat, stir in heavy cream, and simmer for about 5 minutes until thickened. Mix in grated Parmesan until melted.
  4. Add spinach to the sauce; cook until wilted. Return chicken to the pan, spooning sauce over each piece. Sprinkle with additional Parmesan and cover for 2 minutes to melt cheese.
  5. Serve garnished with thinly sliced lemon and extra Parmesan.
