  • 2 eggs
  • 1 tablespoon heavy cream
  • 2.5 oz beef rinds (approx. 1 cup)
  • ½ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchini into matchsticks, leaving some peel on for added flavor.
  3. In a mixing bowl, combine the eggs and heavy cream until well mixed.
  4. In a food processor, grind the beef rinds to fine crumbs and mix in the grated Parmesan.
  5. Dip each zucchini stick into the egg mixture, then coat with the beef rind mixture before placing them on a baking rack over a baking sheet.
