  • 3/4 cup Swerve Granular
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar-free sprinkles
  • 8 ounces cream cheese (softened)
  • ⅓ cup powdered Swerve Sweetener
  • 1 large egg (room temperature) for filling
  • ½ teaspoon vanilla extract for filling
  • 2 tablespoon heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat softened butter and Swerve Granular until fluffy. Add the egg, egg yolk, and vanilla; mix well.
  3. In another bowl, whisk almond flour, baking powder, and salt. Gradually combine with the butter mixture.
  4. Press the mixture into a greased 9×13-inch baking pan and sprinkle with sugar-free sprinkles.
  5. For the filling, beat cream cheese and powdered Swerve until smooth. Add an egg and vanilla; mix until incorporated.
  6. Pour the cheesecake filling over the crust evenly.
  7. Bake for about 40 minutes until set but slightly jiggly in the center. Cool completely before slicing.
