  • 3/4 cup Swerve Granular
  • 1 large egg
  • 1 large egg yolk
  • 1 1/2 tsp vanilla extract
  • 2 3/4 cups almond flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp sugar-free sprinkles
  • 8 ounces softened cream cheese
  • 1/3 cup powdered Swerve Sweetener
  • 2 tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a bowl, mix softened butter and Swerve Granular until creamy. Stir in the egg, egg yolk, and vanilla extract. Gradually add almond flour, baking powder, and salt; mix well.
  3. Press the mixture into the prepared pan and bake for about 15 minutes until lightly golden. Let cool slightly.
  4. In another bowl, beat cream cheese with powdered Swerve until smooth. Add one egg, vanilla extract, and heavy cream; mix until blended.
  5. Pour the cheesecake mixture over the cooled crust and spread evenly. Bake for an additional 25-30 minutes until set.
  6. Cool completely in the pan and refrigerate for two hours before cutting into bars.
