  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup water
  • 1 cup mascarpone cheese
  • 1 cup whipping cream
  • 2 tablespoons erythritol, ground
  • 1 tablespoon vanilla extract
  • 2 cups strawberries, sliced

Instructions

  1. Prepare the strawberry layer by mixing chopped strawberries, lemon juice, erythritol, and water; let sit for 10 minutes.
  2. For the cake layer, cream softened butter with erythritol, add egg yolks one at a time, then mix in vanilla extract. Combine dry ingredients and water; fold in whipped egg whites.
  3. Bake the cake batter at 350°F (175°C) for about 25 minutes; let cool.
  4. Whip mascarpone with cream and erythritol until fluffy.
