  • 3 large bell peppers
  • 1 pound lean ground beef
  • 1 cup keto tomato sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup whole milk ricotta cheese
  • 1/4 cup Parmesan cheese
  • 1 tsp olive oil
  • 1/4 tsp fennel seeds

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Brush with olive oil and place in a baking dish.
  3. In a skillet, cook fennel seeds until fragrant, add ground beef, and cook until browned. Drain excess fat.
  4. In a mixing bowl, combine cooked beef with tomato sauce, half the mozzarella, ricotta, and Parmesan.
  5. Fill each bell pepper with the mixture, top with remaining mozzarella.
  6. Cover with foil and bake for 30 minutes; then uncover and bake for an additional 10 minutes until cheese is bubbly and golden.
  7. Let cool slightly before serving.
