  • 1 tablespoon avocado oil
  • 1 pound ground beef
  • 1 onion (diced)
  • 6 cloves garlic (minced)
  • 1 (14 oz can) crushed tomatoes
  • 1 (6 oz can) tomato paste
  • 1 (14 oz can) tomato sauce
  • 2 ½ cups chicken broth (low sodium)
  • 1 teaspoon fennel seeds
  • 2 teaspoons Italian seasoning
  • 1 ½ teaspoons Kosher salt
  • ½ teaspoon black pepper
  • 8 oz mozzarella (shredded)
  • ½ cup Parmesan cheese (grated)
  • ½ cup fresh parsley (chopped)

Instructions

  1. In a large heavy-bottom pot, heat avocado oil over medium-high heat. Add ground beef and diced onion; cook until browned and onions are translucent (about 8 minutes). Stir in minced garlic for another 1-2 minutes.
  2. Mix in crushed tomatoes, tomato paste, tomato sauce, chicken broth, and seasonings (Italian seasoning, salt, pepper, fennel seeds). Bring to a boil then reduce heat to simmer for 20 minutes.
  3. Remove from heat; stir in mozzarella and Parmesan cheese until melted. Serve hot with additional cheese and parsley on top.
