  • 1 pound ground chuck
  • 1 (14.5 ounce) can petite diced tomatoes
  • 8 hot dogs
  • 8 low carb tortillas
  • 1 cup shredded cheddar cheese
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 cup water

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9×13 inch casserole dish with nonstick spray.
  2. In a medium saucepan, combine cooked ground chuck, diced tomatoes, water, and spices. Bring to boil, then reduce heat and simmer for 8-10 minutes.
  3. Spread half of the chili mixture in the bottom of the casserole dish. Roll each hot dog in a tortilla and place seam-side down on top of the sauce.
  4. Pour remaining chili sauce over hot dogs and sprinkle with cheddar cheese.
  5. Bake for 30-35 minutes until heated through and bubbly.
