  • 2 cups shredded cheddar cheese
  • 1 pound ground beef
  • 1/4 onion (chopped finely)
  • 2 tbsp dill pickle relish
  • 1/2 tsp Worcestershire sauce
  • 1 cup shredded lettuce
  • 1/3 cup mayonnaise
  • 1 tbsp sugar-free ketchup
  • 1 tsp Swerve confectioner’s sugar substitute

Instructions

  1. In a skillet over medium-high heat, brown the ground beef with chopped onions until softened. Drain excess grease.
  2. Stir in dill pickle relish, Worcestershire sauce, and season with salt and pepper; sauté until well combined.
  3. In a mixing bowl, combine mayonnaise, dill pickle relish, Swerve, and sugar-free ketchup; mix well.
  4. Preheat the oven to 400°F. On a parchment-lined baking sheet, arrange circles of shredded cheese and bake for 6-8 minutes until edges are crispy.
  5. Remove from oven; place sauce down the center of each cheese circle, followed by shredded lettuce and beef mixture.
  6. Roll up each cheese circle around the filling and allow to cool slightly before serving.
