Italian Grinder Chicken Salad is a vibrant and flavorful dish that transforms the classic grinder sandwich into a refreshing salad. This easy-to-make recipe combines tender rotisserie chicken with zesty turkey meats, crisp vegetables, and a rich creamy dressing.

  • 2 cups shredded rotisserie chicken
  • 1/4 lb diced turkey slices
  • 1/4 lb diced turkey pepperoni
  • 2/3 cup diced grape tomatoes
  • 1/3 cup banana peppers
  • 1/2 red onion, sliced thin or diced
  • 1/4 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 3 tablespoons red apple vinegar
  • 12 tablespoons banana pepper juice from the jar (to taste)
  • 1 tsp oregano
  • 1 tsp garlic powder
  • Freshly cracked pepper
  • Salt to taste (about 1/4 tsp)

Instructions

  1. Start by making the dressing. Combine all the dressing ingredients in a bowl or liquid measuring cup. Taste and adjust if needed.
  2. In a large bowl, combine all of the toppings: shredded rotisserie chicken, diced turkey meats, sliced red onion, diced tomatoes, banana peppers, and cheeses.
  3. Pour most of the dressing over the bowl of toppings. Toss well to coat everything evenly. If necessary, add more dressing according to your taste preference.
  4. Store any leftover salad in an airtight container in the fridge for up to 4 days.
  5. If you have dressing leftover after storing the salad overnight, keep it in a sealed container in the fridge. Add it back to the chicken salad when you're ready to serve for extra flavor.
