  • 3/4 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 1 cup cottage cheese
  • 1/3 cup unsweetened plain Greek yogurt
  • 2 tbsp cream cheese
  • 2 tbsp sugar-free maple syrup
  • 1 egg
  • 1/4 tsp baking powder
  • 1 scoop PEScience Strawberry Cheesecake Protein Powder
  • 3/4 cup frozen strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners.
  2. In a blender, crush graham cracker crumbs and mix with melted butter. Press into the bottom of each muffin liner to form a crust.
  3. Blend cottage cheese, Greek yogurt, cream cheese, maple syrup, egg, baking powder, and protein powder until smooth.
  4. Pour the cheesecake filling into the crusts and bake for 38-41 minutes or until set.
  5. While baking, heat frozen strawberries in a saucepan until they break down into a liquid consistency; set aside.
  6. Allow cheesecake bites to cool slightly before adding the strawberry topping. Refrigerate overnight before serving.
