Ingredients

Scale
  • 1 cup mashed sweet potato
  • 1 cup unsweetened almond butter
  • 2 large eggs
  • ⅔ cup pure maple syrup
  • 2 tsp pure vanilla extract
  • 1 tsp cider vinegar or lemon juice
  • ½ cup full-fat canned coconut milk
  • ⅔ cup cocoa powder
  • 3/4 tsp baking soda
  • ½ tsp ground cinnamon (optional)
  • 1 tsp sea salt
  • 1 cup chocolate chips
  • 1 tbsp coconut oil or butter
  • Pinch sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking pan by greasing it with coconut oil or lining it with parchment paper.
  2. In a large mixing bowl, blend together the mashed sweet potato, almond butter, eggs, maple syrup, vanilla extract, cider vinegar (or lemon juice), and coconut milk until smooth.
  3. In another bowl, whisk together the cocoa powder, baking soda, ground cinnamon (if using), and sea salt. Gradually combine this dry mixture into the wet ingredients until fully incorporated.
  4. Gently fold in the chocolate chips.
  5. Pour the batter into the prepared baking pan and spread evenly. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before slicing.
