  • 1 1/4 cup blanched almond flour (or tigernut flour)
  • 3 Tbsp coconut sugar
  • 1 Tbsp ground flaxseed
  • 1/8 tsp salt
  • 3 Tbsp melted coconut oil
  • 1 Tbsp water
  • 1 tsp vanilla extract
  • 2 Tbsp dark chocolate
  • 3 Tbsp peanut butter (or Sunbutter)
  • 1 cup dark chocolate (for coating)
  • 1/2 Tbsp coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut sugar, ground flaxseed, and salt. Add melted coconut oil, water, and vanilla extract; mix until smooth.
  3. Spread the mixture evenly on the baking sheet to about half an inch thick and bake for 8 minutes until lightly golden. Let cool completely.
  4. For the filling, melt dark chocolate and mix with nut butter until smooth. Spread over the cooled base.
  5. Melt remaining dark chocolate with coconut oil and pour over the filling layer.
  6. Refrigerate for about 30 minutes until set, then cut into bars.
