Ingredients

  • 2 tbsp Olive oil
  • 1 medium Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 tsp Fresh ginger (minced)
  • 1/2 cup Bell peppers (diced)
  • 1 tsp Italian seasoning (optional)
  • 1/4 tsp Red pepper flakes (optional)
  • 1 tsp Sea salt
  • 1/2 tsp Black pepper
  • 1 lb Boneless skinless chicken breasts
  • 6 cups Chicken broth, reduced sodium
  • 1 cup Broccoli (cut into florets)
  • 1 cup Cauliflower (cut into florets)
  • 2 tbsp Lemon juice

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Sauté diced onion, minced garlic, and ginger for 3-4 minutes until fragrant.
  3. Add diced bell peppers, Italian seasoning, red pepper flakes, sea salt, and black pepper; cook for another 3 minutes.
  4. Incorporate chicken breasts and chicken broth; simmer for 20 minutes.
  5. Remove chicken, shred it using two forks, and return to the pot.
  6. Stir in broccoli and cauliflower; simmer for an additional 10 minutes until tender.
  7. Finish with lemon juice and serve hot.
