  • 3 cups cauliflower florets
  • 1 cup frozen mixed vegetables (corn, carrots, green beans & peas)
  • 8 ounces cooked chicken breast or turkey
  • 2 teaspoons Better than Bouillon chicken base (or chicken broth)
  • 2 tablespoons nutritional yeast (or grated parmesan cheese)
  • 2 cloves garlic
  • Olive oil and selected herbs for flavor

Instructions

  1. In a large soup pan, cook cauliflower with enough water until fork-tender. Drain, reserving some cooking liquid.
  2. Blend the cauliflower with olive oil, nutritional yeast, garlic, herbs, and reserved liquid until smooth.
  3. In the same pan, sauté frozen vegetables for 1-2 minutes. Add chopped chicken and bouillon mixture.
  4. Stir in the pureed cauliflower sauce and cook for about 5 minutes until well combined.
