  • 2 tbsp butter
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 2 cups cauliflower rice
  • 1 cup shredded Monterrey Jack cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 oz canned green chiles (drained)
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • Seasonings: salt, black pepper, granulated garlic

Instructions

  1. Preheat your oven to 325°F (163°C). Grease an 8×8 baking pan.
  2. Prepare cauliflower rice by cooking frozen or steaming fresh until slightly tender, then squeeze out excess moisture.
  3. In a medium sauté pan, melt butter over medium-high heat and cook onions and celery until tender. Stir in cream until thickened.
  4. In a large bowl, combine cauliflower rice, half the cheese, green chiles, sour cream, sautéed veggies, and seasonings. Mix well.
  5. Spread mixture into the prepared pan and top with remaining cheese. Bake for 20–25 minutes until bubbly.
